Overview

Conching is a critical part of chocolate manufacturing. It produces a smooth chocolate mass with a distinctive aroma and taste when done correctly. Pumps in this stage of chocolate production recirculate the liquid chocolate from the conching machine and then back into the conching machine. This process may go on for hours, depending on the cacao beans being processed; thus, a reliable and pulse-free pump must be used.

Problem

A chocolate manufacturer wanted to install two new chocolate conches in their factory. They have two operational conches with Viking gear pumps for recirculating chocolate into the machines. They needed a similar setup but also required the new systems to be cost-effective while maintaining the quality of the chocolate product.

The Solution

All-Pumps supplied two Roper 3600 Series chocolate gear pumps for the client's new conching equipment. These pumps are equipped with a heating jacket to maintain the chocolate's warmth and fluidity during pumping. They also have a lantern ring in the gland packing to prevent air from entering the process and keep the chocolate fluid for longer. Additionally, Roper chocolate gear pumps use iron bearings with large square grooves, ensuring better circulation of the chocolate and preventing build-up.
